It’s the Monday after July 4 and we’re here to talk about BBQ.
Because whatever charcoal-grilled morsels you had over the weekend can’t possibly compare to our new favorite barbecue joint, even if it is up in Plano.
Last month, Chef Kent Rathbun opened his latest concept, Hickory, and it’s worth the drive—kind of like a booty call for meat. A different kind of meat.
On the starter scene, the onion rings are possibly the best we’ve ever eaten, the basket overflowing with fried yellow, purple and green onions. Ask for a side of homemade ranch and snack heaven is yours for the crunching. Fried green tomatoes come in nugget form, which is pretty genius for sharing—and keeping that important veggie to batter ratio at its prime.
Salads are spectacular if you’re the type to order such a thing at a BBQ place. The smoked turkey Cobb is just about as meaty as a brisket plate, but the greens make you feel a little less guilty.
Now as for all that meat, it’s the star for a reason. Wagyu beef brisket melts in your mouth, and that’s not just a marketing line we were fed that we’re turning back on you. It’s truly delectable. As are the Flintstone-sized ribs.
