Summer Oven Lovin’

Fresh and local. It’s not just how we like our tricks any more. It’s also how we prefer our summer fare. Because heavy, fried, starchy foods have no place on a plate in June, July or August, especially in Dallas. Antarctica – perhaps.

That’s why one of our favorite places for a special-occasion (or expense account) summer dining is Pyramid Restaurant & Bar at the Fairmont Dallas hotel.

Chef André Natera has created a delightfully light and satisfying summer menu along with Executive Sous Chef Paul Peddle, Pastry Chef Maggie Huff, and Sommelier of our Dreams, Hunter Hammett, one of the best wine gurus in town. Together, they create a culinary experience not only worth writing home about, but tattooing on your left ass cheek for more permanence.

Our favorite items on the warm-weather menu include perfect pork dumplings, a delightful heirloom tomato salad, and cod with sweet and sour tomatoes and caper butter sauce. Fish hasn’t been this good since Nemo was lost.

For dessert, the chocolate marquis with peanut butter ganache, bourbon caramel sauce and salted caramel ice cream could be one of our all-time favorite sweet endings. It may not sound light, but it melts in your mouth and left us craving more. A whole lot more.

The menu also features items like tuna crudo, bison carpaccio, baby beet salad, scallops over sliced mango and ricotta-spinach ravioli that are all part of select group of items designed to be healthy and tasty. Just like our personal trainer.
