Being topped has never been more enjoyable.

At least that’s what the patties at Liberty Burger are probably thinking. Sure, it took us a while to finally get to this newish far-north Dallas restaurant, but it was worth the wait.

In a city where new burger joints pop up every 12.5 minutes, it’s rare for one to catch our imagination as equally as it thrills our taste buds.

Looking at the menu, we simply stared with our mouths agape, desperate to determine which one we wanted to try. Luckily our friend was open to a little meat-swapping so we got to try more than one.

Beef burgers are made from a mixture of chuck, tenderloin and brisket. But there are also house-made veggie, turkey, chicken and lamb burgers to consider.

Not only are the ingredients top-quality, but the grill masters have created several signature burgers with intriguing topping combinations.

Take the Napa, covered with green olives, wild arugula, oven-roasted tomatoes and Gorgonzola cheese. Or the Amore, consisting of a melty Paremsan cheese crisp, baby spinach, cantaloupe(?!), ham and basil garlic aioli.

Our favorites were the Chillerno (pictured), a just-spicy-enough combo of flame-roasted Poblano peppers, oozy queso blanco and tangy BBQ sauce, and the Libertine, a super-juicy turkey burger features marinated fresh cucumber slices, arugula, avocado, tomato and purple onion.

Speaking of onions, the Big O Rings are some of the best onion rings we’ve tasted in a long time. Coated in house-made buttermilk batter, they’re fried to order and come out crisp and flavorful, without a bit of stray grease. (Splurge for a side of ranch dressing for dipping, or slather with the tangy Liberty mustard available at the condiment bar).

Even desserts here are memorable. Cookies, shakes and killer baby meringue pies put the final exclamation point on a meal well worth shouting about.
